MANGO SALSA CHICKEN WITH BLACK BEANS AND VEGGIES – WENDY BLANCHARD, M.S., CHHC

This is an easy way to prepare dinner in the Crockpot that is delicious and healthy!

INGREDIENTS:

3 lbs. organic boneless chicken, cut into strips
1 red bell pepper, organic, cut
3 fresh basil leaves, organic
1 1/2 – 2 cups Mango salsa, gluten free
1 8-oz. bag of frozen spinach, organic, thawed
1 15-oz. can of black beans, organic, drained and rinsed
1/2 lb. fresh organic carrots, cut

INSTRUCTIONS:

Place chicken into the Crockpot, and then the rest of the ingredients on top. Cook on high for 4 – 5 hours, or on low for 6-8 hours. Serve over gluten free brown rice pasta.
