BAKED PLANTAIN CHIPS! – WENDY BLANCHARD, M.S., CHHC

2 green Plantains

2 T Olive Oil

1/2 t sea salt

black pepper, to taste

For a spicier chip, add…

1 t chili powder

1/2 t cumin

1/8 t cayenne pepper

Cut off the ends and score lengthwise with a paring knife and pull skin sideways away from the center…not lengthwise. (Be aware that there is a milky juice that oozes from the skin that will stain.)

Slice plantains about 1/8” thick, place on a baking sheet one layer thick and bake for 20 -25 minutes on 425 degrees. Turn chips halfway through. Color should be golden brown.  Remove and let chips stand for 5 minutes. Eat immediately as they tend to soften.

Use organic ranch dip, or your favorite dip, if desired!
