Almond Chicken with Peach Relish – Wendy Blanchard, M.S.


Remember to use all natural/organic ingredients!


1 lb. boneless, skinless chicken breasts
2 T. Italian gluten-free breadcrumbs
2 T. chopped almonds
1 T. GO Veggie!
1/4 t. ground black pepper
2 cups diced peaches, skins left on
2 T. lemon juice
1 T. lime juice
1/2 c. sliced purple onion


Preheat oven to 375 degrees, and coat pan with natural cooking spray. Cut chicken into strips and place in pan. Combine bread crumbs, almonds, GO Veggie!, and pepper. Coat evenly on chicken. Bake uncovered for 25 minutes.

Combine peaches, lemon juice, lime juice, onion, and pepper to taste. Serve baked chicken with peach relish on the side.
