APPLE CHOCOLATE CHIP COOKIES – WENDY BLANCHARD, M.S.

My grand-daughter, Rosie, came up with an awesome cookie idea! She asked me if we could bake apple-chocolate chip cookies! So, I went to work on a recipe, and here is what we created! Please remember to use all natural and/or organic products, and gluten and dairy free!
INGREDIENTS:
1/2 cup plus 2 tablespoons vegan sticks, softened
1 cup plus 2 tablespoons packed brown sugar
1 large egg
2 tablespoons almond milk
3/4 teaspoon almond extract
1 1/2 cups gluten free almond flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups gluten-free old-fashioned rolled oats
2 chopped peeled green apples
1 bag dairy free/gluten free mini chocolate morsels
2 tablespoons water

INSTRUCTIONS:

1. Preheat oven to 325°.

2. Beat butter and brown sugar with a mixer at medium speed until creamy. Add egg, milk, and almond extract; beat 2 minutes or until light and fluffy.

3. Combine flour, baking soda, and salt in a separate bowl, stirring with a whisk. Stir in oats. Add oat mixture to butter mixture, beating at low speed until blended. Stir in apples and chocolate morsels.

4. Drop dough by 1 1/2 tablespoonfuls 2 inches apart onto baking sheets lined with parchment paper.

5. Bake at 350 for 8-10 minutes or until golden. Transfer cookies to wire racks; cool completely.
