BROCCOLI GOAT CHEESE CRUSTLESS QUICHE – WENDY BLANCHARD, M.S., HOLISTIC HEALTH COACH

INGREDIENTS:

2 c. fresh broccoli florets (boil or steam for about 10 minutes)
2 c. sweet potatoes, cut into small chunks (boil or steam for about 10 minutes)
1 c. zucchini, cut
1 c. onion, diced
1 clove garlic, minced
1/2 t. celery salt
1/4 t. chili powder
1 t. basil
6 eggs
salt and pepper, to taste
1/2 c. almond milk
2-3 oz. crumbled goat cheese
1 T. Avocado or Olive oil

INSTRUCTIONS:

After boiling or steaming the sweet potatoes and broccoli till almost soft, set aside.

In about 1 T. Avocado oil or Olive Oil, sauté garlic with onion and zucchini till onion is transparent. In the meantime, in a medium bowl, scramble eggs, milk, and spices. Add remaining ingredients including the sautéed veggies and broccoli and sweet potatoes to eggs.

Line a pie dish or quiche dish with parchment paper. Pour eggs into dish. Garnish with broccoli florets. Bake at 325 degrees for about 55 minutes. Cool about 5 minutes before cutting.

Serves 4-6
