FAMILY WEEKEND BAKING FUN! QUINOA BANANA MUFFINS! – WENDY BLANCHARD, M.S.

My grand-daughter, Rose, and I spent the past four days enjoying quality time, and fun! Rose wanted to bake cookies, and muffins! We made Quinoa Banana Muffins, and more of one of my favorite cookie recipes, Quinoa Chip Cookies (both wheat-free). (See the recipe for the cookies on July 14, 2014). This recipe is on the box of Quinoa Flakes. All of my ingredients, of course, are natural/organic!

QUINOA BANANA MUFFINS

INGREDIENTS:

1/2 cup Quinoa flour
1/2 cup Quinoa flakes
2 T. honey
2 t. baking powder
1 t. baking soda
1/2 t. salt
2 very ripe bananas
2 eggs

INSTRUCTIONS:

Preheat oven to 400 degrees. Mix flour and flakes with dry ingredients. In a separate bowl, mix together bananas, eggs, and honey, and add to dry ingredients. Mix thoroughly. Pour into greased muffin tins. Bake 20-25 minutes at 400 degrees.

NOTE: Fill muffin tins 1/2 full. For waffles, add 3 tablespoons vegetable oil and 1/2 cup milk, or until desired consistency.
