HAPPY FATHER’S DAY! ENJOY A SUPER SALMON SMORGASBOARD SALAD! – WENDY BLANCHARD, M.S.

I used all organic veggies including zucchini, red/yellow  bell peppers, spinach, cucumber, tomatoes, brussel sprouts, radishes, goat cheddar cheese, and celery. Add in organic grapes, mandarin oranges, or whatever  you desire. I also cut up a kosher dill pickle and added it in, along with slivered almonds.  I used a can of organic Wild Alasksa Pink Salmon, and added about 2 T. Vegenaise Grapeseed Oil “Better Than Mayo,” salt and pepper to taste.  Use any veggies that you have available.

I made a healthy and yummy Strawberry Vinaigrette Dressing for the salad.  In a food processor, add 1/2 cup of organic strawberries, 2 T. organic/all natural Strawberry Fruit spread made by St. Dalfour, 2 T. Grapeseed Oil, and 1/4 cup balsamic vinegar.

As an alternative, try fresh smoked salmon in place of the canned salmon! Both healthy and eas-e!!!
