MOM’S DAY HEALTHY FAVS! CHICKEN LOAF, BURGERS, SWEET POTATO/TURNIP FRIES! – WENDY BLANCHARD, M.S.

This is a healthy and easy recipe for your husband, significant other, or kids to prepare for YOU on Sunday which is Mother’s Day!

I used two pounds of organic chopped chicken to make a chicken loaf, and some chicken burgers.  I mixed in two organic eggs, about 1 c. gluten free bread crumbs, and about 1/2 cup of organic ketchup (made without high fructose corn syrup!) The ketchup gives it a little bit of a sweet taste!  I added in 1 Tablespoon of salt, 1 Tablespoon of organic dried basil, and about 2 t. garlic powder.  Mix ingredients with your hands in a large mixing bowl, and place in 8×8 baking pan.  Bake on 350 degrees for about 35-40 minutes, and check at 35 minutes, or prepare the entire mixture as burgers, and enjoy from the grill!

I had some leftover sweet potatoes, and turnip from my Chicken Veggie Soup that I made earlier in the day, so I decided to make some roasted veggies for a change!  I added 1 Tablespoon olive oil, Sea salt and pepper, to taste, and sprinkled on paprika.  Bake at 350 degrees for about 30-35 minutes.   Using paprika flavors this healthy dish with a bit of a pungent taste, and also helps to boost your metabolism, reduce your appetite, and lower your blood pressure!

I boiled some fresh organic green beans, and served them with a little olive oil and apple cider vinegar.

These dishes are very healthy and easy to prepare, and are delicious!
