NOODLE PUDDING – WENDY BLANCHARD, M.S., CHHC

My grandmother, and my mother used to make this easy recipe for Rosh Hashanah when I was growing up, and I always made it for my family. It was one of our favorites!

Ingredients:

1 bag gluten free Manischewitz egg noodles, cooked
3 eggs, organic, beaten
Sea salt and Simply Organic black pepper, to taste
4 T. Olive or grape seed oil

Instructions:

Combine cooked egg noodles, eggs, salt and pepper.  Add oil to frying pan, and wait until it is hot to add the noodle mixture. Cook on medium heat until bottom is brown. Shut off flame, and carefully flip noodle pudding onto a clean plate, brown side up. Carefully and slowly slide uncooked side onto bottom of pan and brown.
