NUTRITIONAL BREAKFAST PARFAIT PUNCH! – WENDY BLANCHARD, M.S., CHHC

This is a recipe with so much nutritional value! You can use any combination of natural raw ingredients that you desire! I like to suggest that you use raw nuts and seeds to get the optimal health benefits of these awesome SUPER-FOODS and antioxidant blast! Gorgeous colors make it so inviting too! I eat Superfoods in my diet every day because they offer so many benefits. Blueberries are one of the best antioxidant rich foods on the planet. Sometimes referred to as the “brain berry,” they are known to neutralize free radical damage to cells, and promote the production of collagen. In addition, they provide anti-inflammatory benefits to the brain and muscle tissue, and they improve digestive and urinary tract health!

Raw nuts and seeds also offer highly beneficial properties. I eat a handful every day! Walnuts are one of the few important plant sources of Omega-3 fatty acids, and anti-oxidants. Flaxseeds are also an awesome source. Just a quarter cup of almonds contains more protein than an egg. They are also a great nut source of vitamin E and Biotin, a B vitamin that promotes healthy skin. They are a great source of fiber. Sunflower Seeds are a great source of selenium, magnesium, folate and potassium, and pumpkin seeds are an incredible source for zinc and iron.

Nutty Mix!

These ratios are just a guide. You can mix any nuts and seeds that you desire, and soaking the seeds overnight is best and recommended, but optional.

  • 1 cup raw pecans
  • 1 cup raw walnuts
  • ½ cup raw pumpkin seeds
  • ½ cup raw sunflower seeds
  • ½ cup raw flax meal

Put all nuts and seeds into a food processor, and pulse for two seconds a couple of times until coarsely chopped. Do not grind this mix too fine. It should be a texture and a combination of different sized pieces.

You can mix in some sweetener as Xylitol, or your healthy choice, and shredded coconut if you desire. Taste it before you do as I didn’t feel that it needed sweetener.

Raw Vanilla Almond Cream

  • 1 cup raw cashews soaked about 3 hours (soaking is optional)
  • 1/2 cup water, filtered
  • 1-2 tablespoon agave nectar
  • 1/2 teaspoon natural vanilla extract
  • a pinch Himalayan sea salt

Put all the ingredients into a blender on high until smooth and creamy (about a minute).

Berries

  • 2 pints of blueberries
  • 2 pints of raspberries or strawberries (cut strawberries in half)

Directions:

  • Start with a layer of berries in each glass. Alternate the layers in the different glasses, so if you start with raspberries on the bottom of one glass, use blueberries in the other. This way when you top each glass with the other berry you will get a pop of color when you put them on the table!
    Place a layer of nut mix on the top. Spoon over a layer of cream. Add another layer of nut and seeds, and then top with the alternate berry.
  • Depending on the size of the glasses and how much cream you use, this recipe makes 2-4 servings.
