QUINOA CHOCOLATE CHIP COOKIES – WENDY BLANCHARD, M.S.

This is a recipe that I have made before, but this time I have added chocolate chips that are organic! YUMMY! All ingredients are natural and organic!

Ingredients:

1/2 cup honey
1/3 cup Brown sugar
1/2 cup vegan natural shortening (1 stick)
1/2 cup Almond butter
1/2 tsp. Vanilla
1 cup Rice Flour
3/4 cup Quinoa Flakes
1 tsp. Baking soda
1/4 tsp. Himalayan salt
approximately 1/2 bag (about 5 oz.) of organic bittersweet chocolate chips

Instructions:

1.  Heat oven to 350 degrees.
2.  Beat honey, brown sugar, margarine, almond butter, and vanilla in medium bowl until creamy.
3.  Combine rice flour, quinoa flakes, baking soda and salt in a small bowl, and add to mixture and beat until thoroughly mixed.  Add in chocolate chips.
4.  Drop by rounded teaspoonfuls about 2 inches apart onto an ungreased cookie sheet.  Bake 12-15 minutes or until light golden brown.  Cool one minute before removing from cookie sheet.  Makes about 3 dozen cookies.
