ROASTED BROCCOLI – WENDY BLANCHARD, M.S.

Ingredients:

1 large head of broccoli, cut
2-3 T. Olive Oil
1/2 t. Sea salt
1/4 t. Black pepper
1/2 of a lemon
1/2 c. crumbled goat cheese

Instructions:

I boiled my broccoli first, and then laid it on a baking sheet tossed with oil, salt, pepper and lemon. Sprinkle with goat cheese. Bake on 350 degrees for about 10 minutes. Serve with lemon wedges, if desired.
