SPINACH PAPAYA FRUIT SALAD – WENDY BLANCHARD, M.S.

I made this healthful salad which is chock full of health benefits for the body, mind, and spirit! The vibrant colors in this creation are so inviting, and the health benefits, are extensive. I used all fresh, organic/natural ingredients, as always, which include papaya, figs, avocado, tomato, spinach leaves, pecans, shirataki angel hair noodles, and fresh lemon.

I began with the spinach leaves, and layered the rest of the ingredients. I used a small scooping tool to scoop out the papaya, and avocado, and topped the salad with pecans, and shirataki noodles. Before you are ready to eat, drizzle lemon onto the salad to pop the flavor of the papaya! I also made a variation of my Walnut Miso Dressing where I substituted pecans for walnuts making it a Pecan Miso Dressing. (see below)

Health benefits of avocado include improved brain health, a source of dietary fiber, better nutrient absorption, may aid in stroke prevention, reduction of cholesterol, and are brimming with “good” fats. Figs are a good source of potassium, a mineral that helps to lower blood pressure. It is also beneficial as a dietary fiber, aids in the prevention of post menopausal breast cancer, cardiovascular health, and helps with macular degeneration, to name a few benefits. Spinach is an awesome green-leafy vegetable often noted as one of the functional foods known for its pure and healthful nutritional, antioxidants and anti-cancer composition.

My Pecan Miso Dressing is easy to prepare, and Miso also offers healthful ingredients which include aiding in poor digestion, cancer, acidic stomach conditions , low libido, poisoning from tobacco, and a variety of intestinal infections. Miso is known as one of nature’s most healing foods!

Pecan Miso Dressing

INGREDIENTS:

1 tsp. (2 slices) of fresh ginger
1/2 c. pecans
1/4 c. extra virgin olive oil
1 clove garlic
1 T. White Miso
2 T. apple cider vinegar
1 big pinch of sea salt

INSTRUCTIONS:

Blend pecans, ginger, and salt, and gradually add all other ingredients. Do this in a food processor, and mix thoroughly.

This light meal is heavy in its healthful contents, and so easy to prepare!
