TURKEY BACON SPLIT PEA SOUP – GOING GREEN FOR ST. PADDY’S DAY! – WENDY BLANCHARD, M.S.

INGREDIENTS:

6 cups gluten free Organic Vegetable Broth
2 cups organic, dried green split peas, rinsed
1 medium onion, chopped, organic
1 cup chopped carrots, organic
1 medium zucchini, diced, organic
1 red bell pepper, cut, organic
3 celery stalks, chopped, organic
3 garlic cloves, minced, organic
1/2 teaspoon organic dried marjoram
1 teaspoon fresh dried basil, organic (I used fresh basil)
1/4 teaspoon ground cumin
3/4-1 teaspoon sea salt
1/2 teaspoon black pepper
1 lb. organic Turkey Bacon, gluten free

INSTRUCTIONS:

1.  In a frying pan, cook turkey bacon, but not too crisp.
2.  In a large saucepan, combine all other ingredients; bring to a boil. Add turkey bacon. Reduce heat; cover and simmer for 1 hour or until peas are tender, stirring occasionally.
3.  Add additional salt, and pepper to taste.  Garnish with your favorite shredded veggies, or dairy free grated cheese!
