VEGGIE AND GOAT CHEESE OMELET FOR BLOOD TYPE O AND FODMAP SAFE – WENDY BLANCHARD, M.S., CHHC

I have created this easy organic breakfast (or brunch) omelet based on my blood type, O, and also followed the FODMAP dietary guidelines to avoid any IBS complications. Yummy and so healthy for those of us with the Universal blood type O and IBS or other digestive disorders. Enjoy!

INGREDIENTS:

3 organic eggs
1 organic baby zucchini
1/2 small organic red pepper
1/2 organic tomato (STAY AWAY FROM CHERRY TOMATOES)
1/3 c. all natural Almond milk
salt to taste
1 T. vegan Earth Balance butter
1 oz. all natural crumbled goat cheese
handful of organic spinach

 

INSTRUCTIONS:

Scramble eggs with whisk in mixing bowl with almond milk and add salt. Add veggies and goat cheese. Melt butter in pan on medium heat. Add eggs and veggies to pan and cook until eggs are not runny, about 5 minutes, stirring eggs and veggies with spatula often.

Remove eggs from pan and add in spinach and lightly toss on medium heat. Toss constantly for 1-2 minutes.
