BAKING A FAMILY FAVORITE FOR THE HOLIDAYS! ALMOND FLOUR CHOCOLATE CHIP COOKIES – Wendy Blanchard, M.S., I.N.H.C.

It is that time of year where I bake my family’s favorite cookie recipes, and also create some new recipes! The holidays certainly have a special meaning this year as we all reconnect and gather after being apart last year due to the pandemic. And this year, we have a brand new addition to our family! My granddaughter, Harper Sydney, just 6 months old! I wonder if I might sneak her a taste of this yummy treat!

Here is one of our family favorites!

INGREDIENTS:

3 c. almond flour
1/2 c. vegan butter sticks or organic butter
1/2 c. organic cane sugar, or coconut sugar
2 eggs
2 tsp. vanilla or almond extract
1 tsp. baking soda
1/2 tsp. sea salt
1 c. gluten/dairy/soy free mini semi sweet chocolate chips

optional: add in 1/2 cup of walnuts or pecans.

INSTRUCTIONS:

1.  Preheat oven to 350 degrees.

2.  With electric hand mixer, at medium speed, mix together vegan sticks, sugar, eggs, and extract. Blend thoroughly.

3.  In a separate bowl, combine flour, baking soda, and salt, and mix well.

4.  Add dry ingredients to wet ingredients. Stir in chocolate chips.

5.  Place a rounded teaspoon full about an inch apart onto a cookie sheet lined with parchment paper. Bake for about 8-10 minutes or until brown.

6.  Cool on wire cookie rack.
