GLUTEN FREE APPLE CRISP – WENDY COVEN BLANCHARD, M.S., INHC, CPS

This is one of my favorite Fall recipes that I created a number of years ago. It has been a favorite among my family, and is a popular order from customers! Enjoy!

INGREDIENTS:

4 c. organic peeled, sliced apples

3/4 c. organic coconut palm sugar

1/2 c. all purpose gluten free/wheat free baking flour

1/2 c. gluten free Organic Quinoa Flakes or gluten free oats

1 T pumpkin pie spices

1 T. organic Flaxseed

1/2 c. Vegan butter, softened

1/8-1/4 c. Coconut Sugar

INSTRUCTIONS:

1.  Preheat oven to 375 degrees

2.  Grease an 8×8 pan with non dairy butter, or spray with nonstick cooking spray

3.  Place apple slices in the pan.

4.  Mix brown sugar, baking flour, quinoa, flaxseed, coconut sugar, and pumpkin pie spices

5.  Fold in butter to make a crumbly texture.

6.  Sprinkle mixture over apples.

7.  Bake 35-40 minutes!  Top with Rice whip. It is Vegan, Dairy-Free, and No cholesterol!
